
Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients:
- 2 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil pesto (store-bought or homemade)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Grated parmesan cheese (optional, for serving)
Instructions:

Spiralize the Zucchini: Using a spiralizer, create noodles from the zucchinis. If you don't have a spiralizer, you can slice the zucchini into thin strips.

Sauté: In a large skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until just tender.

Add Tomatoes: Stir in cherry tomatoes and cook for another 2 minutes, until they are warmed through.

Mix in Pesto: Remove the skillet from heat and toss the zucchini noodles and tomatoes with pesto. Season with salt and pepper to taste.

Serve: Top with grated parmesan cheese if desired and serve immediately.
