Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients:

  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil pesto (store-bought or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Grated parmesan cheese (optional, for serving)

Instructions:

  1. Spiralize the Zucchini: Using a spiralizer, create noodles from the zucchinis. If you don't have a spiralizer, you can slice the zucchini into thin strips.

  2. Sauté: In a large skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until just tender.

  3. Add Tomatoes: Stir in cherry tomatoes and cook for another 2 minutes, until they are warmed through.

  4. Mix in Pesto: Remove the skillet from heat and toss the zucchini noodles and tomatoes with pesto. Season with salt and pepper to taste.

  5. Serve: Top with grated parmesan cheese if desired and serve immediately.
