Zucchini Noodles with Avocado Pesto

Ingredients:

  • 2 large zucchinis
  • 1 ripe avocado
  • 1 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles and set aside.
  2. In a food processor, combine the avocado, basil, garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper.
  3. Toss the zucchini noodles with the avocado pesto until well coated.
  4. Serve immediately, garnished with extra basil if desired.
