
Zucchini Noodles with Avocado Pesto

Ingredients:
- 2 large zucchinis
- 1 ripe avocado
- 1 cup fresh basil leaves
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- Using a spiralizer or a vegetable peeler, create zucchini noodles and set aside.
- In a food processor, combine the avocado, basil, garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper.
- Toss the zucchini noodles with the avocado pesto until well coated.
- Serve immediately, garnished with extra basil if desired.
