
Vegetable Stir-Fry with Tofu

Ingredients:
- 1 block firm tofu, drained and cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil or vegetable oil
- 1 tablespoon cornstarch (optional, for crispy tofu)
- 2 garlic cloves, minced
- 1 teaspoon grated ginger (optional)
- Cooked rice or quinoa for serving
Instructions:
- If using, toss the cubed tofu in cornstarch until coated. In a large skillet, heat 1 tablespoon of oil over medium-high heat.
- Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.
- In the same skillet, add the remaining oil and sauté the garlic and ginger for 1 minute.
- Add the mixed vegetables and cook for about 5-7 minutes, or until just tender.
- Return the tofu to the skillet, pour in the soy sauce, and stir everything together. Cook for another minute until heated through.
- Serve the stir-fry over cooked rice or quinoa.
