Vegetable Stir-Fry with Tofu

Ingredients:

  • 1 block firm tofu, drained and cubed
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil or vegetable oil
  • 1 tablespoon cornstarch (optional, for crispy tofu)
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger (optional)
  • Cooked rice or quinoa for serving

Instructions:

  1. If using, toss the cubed tofu in cornstarch until coated. In a large skillet, heat 1 tablespoon of oil over medium-high heat.
  2. Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.
  3. In the same skillet, add the remaining oil and sauté the garlic and ginger for 1 minute.
  4. Add the mixed vegetables and cook for about 5-7 minutes, or until just tender.
  5. Return the tofu to the skillet, pour in the soy sauce, and stir everything together. Cook for another minute until heated through.
  6. Serve the stir-fry over cooked rice or quinoa.
