Vegan Quinoa Stir-Fry

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 cup diced bell peppers
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • Sesame seeds, for garnish

Instructions:

  1. In a pot, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes or until fluffy.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
  3. Add bell peppers, broccoli, and carrot to the skillet and stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Stir in cooked quinoa and soy sauce, mixing well.
  5. Garnish with sesame seeds and serve hot.
