Vegan Quinoa Stir-Fry

Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 cup diced bell peppers
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce or tamari
- 1 tbsp olive oil
- Sesame seeds, for garnish
Instructions:
- In a pot, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and cook for about 15 minutes or until fluffy.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
- Add bell peppers, broccoli, and carrot to the skillet and stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Stir in cooked quinoa and soy sauce, mixing well.
- Garnish with sesame seeds and serve hot.
