
Vegan Banana Oatmeal Cookies

Ingredients:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup peanut butter or almond butter
- 1/4 cup maple syrup (optional for additional sweetness)
- 1/2 tsp cinnamon
- 1/4 cup dark chocolate chips or raisins (optional)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together mashed bananas, rolled oats, nut butter, maple syrup (if using), and cinnamon until combined. Fold in chocolate chips or raisins if desired.
- Scoop tablespoons of the mixture onto the prepared baking sheet, flattening them slightly.
- Bake for 15-20 minutes until golden brown.
- Allow to cool before serving. Enjoy these healthy snacks!
