Vegan Banana Oatmeal Cookies

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup maple syrup (optional for additional sweetness)
  • 1/2 tsp cinnamon
  • 1/4 cup dark chocolate chips or raisins (optional)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together mashed bananas, rolled oats, nut butter, maple syrup (if using), and cinnamon until combined. Fold in chocolate chips or raisins if desired.
  3. Scoop tablespoons of the mixture onto the prepared baking sheet, flattening them slightly.
  4. Bake for 15-20 minutes until golden brown.
  5. Allow to cool before serving. Enjoy these healthy snacks!
