
Sweet Potato and Sausage Hash

Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 lb Paleo-friendly sausage (pork, turkey, or chicken)
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- In a large skillet, heat olive oil over medium heat. Add sweet potatoes and cook until they start to soften, about 10-12 minutes.
- Push the sweet potatoes to one side of the pan and add the sausage. Cook until browned and cooked through.
- Add the bell pepper and onion, mixing everything together. Cook until the vegetables are tender.
- Season with salt and pepper, garnish with fresh parsley, and serve warm.
