Sweet Potato and Black Bean Tacos

Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- 1/2 tsp chili powder
- Corn tortillas
- Avocado, sliced (for topping)
- Fresh cilantro, for garnish
- Lime wedges
Instructions:
- Preheat oven to 400°F (200°C). Spread diced sweet potatoes on a baking sheet, season with cumin, chili powder, salt, and pepper, and toss to coat. Roast for 25-30 minutes until tender.
- In a pan, heat black beans until warmed through.
- Warm corn tortillas in a skillet or microwave.
- Assemble tacos by placing roasted sweet potatoes and black beans on tortillas.
- Top with avocado slices and garnish with fresh cilantro. Serve with lime wedges.
