Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Corn tortillas
  • Avocado, sliced (for topping)
  • Fresh cilantro, for garnish
  • Lime wedges

Instructions:

  1. Preheat oven to 400°F (200°C). Spread diced sweet potatoes on a baking sheet, season with cumin, chili powder, salt, and pepper, and toss to coat. Roast for 25-30 minutes until tender.
  2. In a pan, heat black beans until warmed through.
  3. Warm corn tortillas in a skillet or microwave.
  4. Assemble tacos by placing roasted sweet potatoes and black beans on tortillas.
  5. Top with avocado slices and garnish with fresh cilantro. Serve with lime wedges.
