
Stuffed Bell Peppers

Ingredients:
- 4 large bell peppers
- 1 pound ground turkey or beef
- 1 small onion, diced
- 1 cup diced tomatoes (fresh or canned)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, brown the ground turkey or beef with diced onion. Add diced tomatoes and Italian seasoning, cooking for about 5 minutes.
- Stuff the bell peppers with the meat mixture and place them upright in a baking dish. Sprinkle cheese on top if using.
- Bake for 25-30 minutes or until the peppers are tender. Serve hot.
