Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 small onion, diced
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground turkey or beef with diced onion. Add diced tomatoes and Italian seasoning, cooking for about 5 minutes.
  4. Stuff the bell peppers with the meat mixture and place them upright in a baking dish. Sprinkle cheese on top if using.
  5. Bake for 25-30 minutes or until the peppers are tender. Serve hot.
