
Mediterranean Quinoa Salad

Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
- In a saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, reduce heat to low, cover, and let simmer for 15 minutes, or until quinoa is fluffy. Let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- Add cooled quinoa to the vegetable mixture.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
- Serve chilled or at room temperature.
