Mediterranean Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, reduce heat to low, cover, and let simmer for 15 minutes, or until quinoa is fluffy. Let it cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. Add cooled quinoa to the vegetable mixture.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  5. Serve chilled or at room temperature.
