
Lemon Garlic Roasted Chicken Thighs with Asparagus

Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1 bunch of asparagus, trimmed
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Zest and juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper, to taste

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare Marinade: In a large bowl, combine minced garlic, olive oil, lemon zest, lemon juice, dried oregano, salt, and pepper.

Marinate Chicken: Add chicken thighs to the bowl and coat them well with the marinade. Let them marinate for about 15-30 minutes for better flavor.

Roast Chicken: Place the marinated chicken thighs on a parchment-lined baking sheet. Roast in the preheated oven for 25 minutes.

Add Asparagus: After 25 minutes, add the trimmed asparagus to the baking sheet around the chicken. Drizzle a little olive oil on the asparagus, season with salt and pepper, and return to the oven for an additional 10-15 minutes until chicken is cooked through and asparagus is tender.
