Ingredients:

  • 1 cup almond flour
  • 2 large eggs
  • 1/4 cup cream cheese, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Sweetener to taste (like erythritol or stevia)
  • Butter or coconut oil for cooking

Instructions:

  1. In a mixing bowl, combine almond flour, baking powder, and sweetener.
  2. In another bowl, whisk together the eggs, cream cheese, and vanilla extract until smooth.
  3. Add the wet ingredients to the dry ingredients and mix until you have a batter.
  4. Heat a skillet over medium heat and add butter or coconut oil.
  5. Pour batter onto the skillet, forming small pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with sugar-free syrup, butter, or berries.
