Ingredients:
- 1 cup almond flour
- 2 large eggs
- 1/4 cup cream cheese, softened
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Sweetener to taste (like erythritol or stevia)
- Butter or coconut oil for cooking
Instructions:
- In a mixing bowl, combine almond flour, baking powder, and sweetener.
- In another bowl, whisk together the eggs, cream cheese, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and mix until you have a batter.
- Heat a skillet over medium heat and add butter or coconut oil.
- Pour batter onto the skillet, forming small pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with sugar-free syrup, butter, or berries.
