Keto Egg Muffins

Ingredients:

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  3. Add spinach, bell peppers, cheese, and cooked bacon or sausage if desired. Mix well.
  4. Pour the mixture evenly into the muffin tin.
  5. Bake for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
  6. Allow to cool slightly before removing from the muffin tin. Enjoy warm or store in the fridge for a quick breakfast option!
