Keto Avocado and Bacon Egg Cups

Ingredients:

  • 2 ripe avocados
  • 4 large eggs
  • 4 slices of cooked bacon, crumbled
  • Salt and pepper to taste
  • Optional: hot sauce or sliced jalapeños for topping

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Halve the avocados and remove the pit. Scoop out a little extra flesh from the center to make room for the egg.
  3. Place the avocado halves in a baking dish, cutting a small slice from the bottom to stabilize if necessary.
  4. Crack an egg carefully into each avocado half.
  5. Sprinkle the crumbled bacon on top and season with salt and pepper.
  6. Bake for 12-15 minutes, until the egg whites are set but yolks remain slightly runny.
  7. Serve warm with optional hot sauce or jalapeños.
