
Creamy Vegan Mushroom Pasta

Ingredients:
- 8 oz pasta (e.g., fettuccine, penne)
- 2 cups mushrooms, sliced
- 1 cup coconut milk or cashew cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
- Add sliced mushrooms and thyme, cooking until mushrooms are tender and golden.
- Reduce heat and pour in coconut milk or cashew cream. Stir until heated through, and season with salt and pepper.
- Toss cooked pasta in the creamy mushroom sauce until well-coated.
- Garnish with fresh parsley before serving.
