Creamy Vegan Mushroom Pasta

Ingredients:

  • 8 oz pasta (e.g., fettuccine, penne)
  • 2 cups mushrooms, sliced
  • 1 cup coconut milk or cashew cream
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
  3. Add sliced mushrooms and thyme, cooking until mushrooms are tender and golden.
  4. Reduce heat and pour in coconut milk or cashew cream. Stir until heated through, and season with salt and pepper.
  5. Toss cooked pasta in the creamy mushroom sauce until well-coated.
  6. Garnish with fresh parsley before serving.
