Coconut Curry Chicken

Ingredients:
- 1 lb chicken breast, cubed
- 1 tablespoon coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 1 cup bell peppers, sliced (any color)
- Salt to taste
- Fresh cilantro for garnish
Instructions:
- In a large skillet, heat coconut oil over medium heat. Add onion, garlic, and ginger, and sauté until the onion is translucent.
- Add the cubed chicken and cook until browned.
- Stir in the curry powder and mix well.
- Pour in the coconut milk and add the bell peppers. Simmer for 15-20 minutes until the chicken is cooked through and the sauce thickens.
- Season with salt and garnish with fresh cilantro before serving.
