Coconut Curry Chicken

Ingredients:

  • 1 lb chicken breast, cubed
  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 cup bell peppers, sliced (any color)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large skillet, heat coconut oil over medium heat. Add onion, garlic, and ginger, and sauté until the onion is translucent.
  2. Add the cubed chicken and cook until browned.
  3. Stir in the curry powder and mix well.
  4. Pour in the coconut milk and add the bell peppers. Simmer for 15-20 minutes until the chicken is cooked through and the sauce thickens.
  5. Season with salt and garnish with fresh cilantro before serving.
