Chickpea Salad Sandwich

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 tbsp vegan mayo
  • 1 tbsp Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper, to taste
  • Whole grain bread or wraps
  • Lettuce or spinach

Instructions:

  1. In a bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  2. Mix in vegan mayo, Dijon mustard, celery, red onion, salt, and pepper until well combined.
  3. Spread the chickpea mixture on whole grain bread or wraps.
  4. Add lettuce or spinach, and close the sandwich or wrap it up.
  5. Serve immediately or refrigerate for later!
