
Chickpea Salad Sandwich

Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tbsp vegan mayo
- 1 tbsp Dijon mustard
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Salt and pepper, to taste
- Whole grain bread or wraps
- Lettuce or spinach
Instructions:
- In a bowl, mash the chickpeas with a fork, leaving some chunks for texture.
- Mix in vegan mayo, Dijon mustard, celery, red onion, salt, and pepper until well combined.
- Spread the chickpea mixture on whole grain bread or wraps.
- Add lettuce or spinach, and close the sandwich or wrap it up.
- Serve immediately or refrigerate for later!
