Chickpea Salad Sandwich

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 celery stalk, diced
  • 1 small red onion, diced
  • Salt and pepper to taste
  • Whole grain bread or wraps
  • Lettuce or spinach (optional)

Instructions:

  1. In a large bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
  2. Stir in the vegan mayonnaise, Dijon mustard, lemon juice, diced celery, and red onion. Mix until well combined.
  3. Season with salt and pepper to taste.
  4. Serve on whole grain bread or wraps with lettuce or spinach.
