
Chickpea Salad Sandwich

Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tablespoons vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 celery stalk, diced
- 1 small red onion, diced
- Salt and pepper to taste
- Whole grain bread or wraps
- Lettuce or spinach (optional)
Instructions:
- In a large bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.
- Stir in the vegan mayonnaise, Dijon mustard, lemon juice, diced celery, and red onion. Mix until well combined.
- Season with salt and pepper to taste.
- Serve on whole grain bread or wraps with lettuce or spinach.
