
Chickpea and Spinach Stew

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups fresh spinach
- Salt and pepper to taste
- Crusty whole grain bread for serving
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion and sauté until soft.
- Stir in garlic, cumin, and smoked paprika, cooking for an additional minute.
- Add chickpeas and diced tomatoes (with their juice) to the pot. Season with salt and pepper, and let simmer for 10-15 minutes.
- Stir in the spinach and cook until wilted.
- Serve hot with crusty whole grain bread.
