Chickpea and Spinach Stew

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • Crusty whole grain bread for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until soft.
  2. Stir in garlic, cumin, and smoked paprika, cooking for an additional minute.
  3. Add chickpeas and diced tomatoes (with their juice) to the pot. Season with salt and pepper, and let simmer for 10-15 minutes.
  4. Stir in the spinach and cook until wilted.
  5. Serve hot with crusty whole grain bread.
