Cauliflower Fried Rice

Ingredients:

  • 1 medium head of cauliflower, grated or processed into rice-sized pieces
  • 2 tablespoons coconut oil or avocado oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (like peas, carrots, or bell peppers, optional)
  • 3 green onions, chopped
  • 2 tablespoons low-sodium soy sauce or coconut aminos
  • Salt and pepper to taste

Instructions:

  1. Prepare Cauliflower: Remove the leaves and stem from the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice.

  2. Scramble Eggs: In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add beaten eggs and scramble until cooked through. Remove and set aside.

  3. Sauté Veggies: In the same skillet, add the remaining oil and toss in the mixed vegetables. Sauté for about 2-3 minutes until tender.

  4. Add Cauliflower Rice: Stir in the cauliflower rice and soy sauce. Cook for another 5-7 minutes, stirring frequently, until the rice is tender but not mushy.

  5. Combine: Add the scrambled eggs and chopped green onions. Mix everything together, then season with salt and pepper to taste.

  6. Serve: Enjoy hot as a main dish or as a side.
