Avocado Egg Salad

Ingredients:

  • 3 hard-boiled eggs, chopped
  • 1 ripe avocado
  • 1 tablespoon mustard
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions:

  1. In a bowl, mash the avocado until creamy.
  2. Add in chopped eggs, mustard, mayonnaise (if using), lemon juice, salt, and pepper. Mix until well combined.
  3. Serve the egg salad on lettuce leaves or in a low-carb wrap.
